The impressive ancient olive trees dominate the scene, with their strange twisted "trunks" and the vines grown in part still under the old sapling system, introduced more than two thousand years ago by the Greeks, constitute striking echoes of the past.
The fermentation is carried out under the constant control of wine experts, so that there is a perfect symbiosis between technology and tradition. The cellar, completely underground, is equipped with modern vinification and bottling plants from which a high quality finished product is obtained, such as the renowned Primitivo di Manduria DOP in the dry version or Dolce Naturale
The range is completed with the production of typical wines from the areas of Salento, rosé and white wines, all IGP, with a unique and timeless taste. The production process also extends to the olive sector; the extraction of the Extra Olive Oil is characterised by the presence of a line dedicated exclusively to the processing of the organic product by cold extraction with the use still today of a crusher with six millstones in black granite stone, thanks to which it is possible to extract a product with exceptional organoleptic properties.
